When our first child was nine months old, I ventured into the world of solid foods for the very first time as a new mom. I had chosen eggs as our very first food, because I'd cut my teeth on scrambled eggs. Who didn't?! They were soft, easy to digest, easy to make, and full of healthy protein. In just a few short minutes, all of our lives would be forever changed. For some reason, our child did NOT want to try the eggs. He fought and fought, but being a "good" new mommy, I insisted he try "at least one bite." Within minutes, his whole body had swollen up and turned beet red. He began to cry, and I was all alone. Panicked, I called 911, but we were on a county line, and the dispatchers argued about which county was to respond to the call. Time was running out for my sweet baby boy. In desperation, I threw him in the car and drove as fast as humanly possible to the nearest hospital, flashing my lights, honking, and recklessly driving on the shoulder, desperate to save my baby's life. I squealed into the hospital and flew inside. Immediately, they grabbed my son and administered epinephrine. He was in full anaphylaxis. We had made it just in time, and they had saved his life. But, we had no idea how our world was about to be turned upside down.
A few months after recovery, we began the arduous task of allergy testing to find out what all our sweet baby was allergic to. After both a blood and skin prick test we learned that our child had FOURTEEN food allergies, and that many of them were at life threatening levels. The bottom dropped out from beneath us. Our child would never be able to get an ice cream cone from the ice cream man, would never get to go out for pizza after the big game, and when he has his first kiss, my first and only thought will be "What did she have to eat right before and is it going to threaten his life?" No one really understands the earth-shattering and never-ending fear and pain of having a loved one with food allergies. The next year was hell on Earth as we tried to navigate what in the world we could feed our child safely. He couldn't attend birthday parties, family BBQ's or holiday meals. He was turned away from schools, and we even had to quit going to church because no one was able to keep him from having constant allergic reactions. We were in the hospital three more times before he turned two. Our family quit going to restaurants and prepackaged foods were nearly out of the question. We constantly buzzed around him in fear he was going to pick up another child's toy and put it in his mouth. Or that someone was going to kiss his face and give him hives. I was tasked with making every meal and snack that my family ate, from scratch, using products I didn't know how to find, or how to use. It was a very difficult time for all of us.
But then....things got better. God gave us the strength to put one foot in front of the other, and just keep moving forward. After another year, I had learned what products I could use as substitutes for his allergens, and I had learned how to cook with them. I experimented, and shopped all over the Metroplex for the most obscure ingredients, and I drained our bank accounts to try to make his life as normal as possible. I began to get more confident and we ventured out to family events and birthday parties, armed with our own allergy free versions of whatever they were serving...complete with his own special birthday cupcake, so he'd never feel left out.
I quickly learned that if I wanted my child to have a normal childhood, this was the life I had to commit to because there was NO ONE out there making ready-made products for those who had multiple food allergies. There's a lot of nut free OR dairy free OR egg free OR gluten free products out there, but hardly any, IF any, that are all four. Cost was another factor. Allergy free foods cost, on average, THREE TO TEN TIMES what traditional products cost. This couldn't be right I thought, how can there be NO ONE helping families with this?!
And so, a dream was born. We've been on our allergy journey for several years now, and I've managed to figure out how to create delicious alternatives to pretty much every food on the market. Most people who try them can't even tell they're allergen free! So, I thought, "why not do for other families what I wish we would've had all this time?" Why not create a company that was totally committed to creating allergy free products that are delicious and affordable? And that's just what I did.
